There are a few countries made up of several national groups...such as Great Britain...that offer multiple types of ethnic recipes.If you should decide to visit France, you would be treated to fine french cooking. If you switch the destination to Spain, you would encounter wonderful spanish cooking. As an American at home, your table can host an incredible array of delightful dishes from all over the world. An added attraction would be some of the unique styles of cooking found here at home. These down home styles would include the Creole cooking of louisiana, and the Down East style of New England. The truth is we have the widest variety of ethnic dishes available for our dining pleasure.
English ethnic foods and recipes: If you were to visit the average neighborhood in England, you would find at least one Fish and Chips take out shop. This is probably the national dish of the country. It is fairly simple to recreate.
Simple English Fish & ChipsThe first task is to create the batter for the fish.the ingredients:1 cup Bisquick 1/2 cup flour dash of garlic powder 8 oz. flat beer....you may substitute flat club soda. mix together until a batter is formed. Dip the fish in the batter adding a bit of salt and pepper to taste. Fry in a hot oil. The chips are nothing more than what we Americans call french fries.the English cooks cut them a bit bigger than we do ours.you simply deep fry them in the oil until they are a pleasant color light brown.They are best served with a dash of vinegar.....though you may accent them as you wish.
Guy Fawkes Punch:November 5th is Guy Fawkes day in England. This punch is a tradition for this celebration.Ingredients:
2 tablespoons brandy 1 can apricot halves sliced 2pints of red wine 3 tablespoons port 2 tablespoons dry sherry 1/2 pint of water 1 cinnamon stick 12 cloves
Instructions:Mix together brandy, sliced apricots and apricot juice. Put wine port, sherry,cinnamon and cloves into a saucepan with the brandy and fruit mixture and bring to a quick boil. Serve steaming hot.Serves about 10 persons. This is a fun addition to our ethnic foods and recipes.
French ethnic foods and recipes
It goes without saying that the French love to eat. some of the most famous ethnic foods and recipes available originate in France. Here are a few choices for our tables.
French Country Style Chicken
2 lb Meaty Chicken pieces, one half breast, drumsticks and thighs Nonstick spray coating 1 cup Sliced fresh mushrooms 1 cup Sliced celery 1 cup Dry white wine 1/2 cup Coarsly chopped carrot 1 med. Onion, cut into large slices 1 clove Garlic, minced 1 Bay leaf 2 tb fresh parsley 1/4 ts Dried thyne, crushed
preparation:
Remove the skin from the chicken. Rinse the chicken; pat dry. Spray a frying pan with nonstick coating. Preheat the frying pan over medium heat. Brown chicken on all sides in hot frying pan. Drain the fat from the frying pan by skimming it. Season chicken lightly with salt and pepper. Add mushrooms, celery, white wine, carrot, onion, garlic, bay leaf, and thyme to the skillet. Bring to quick boil and then reduce the heat. Cover and simmer for about 40 minutes or until the chicken is tender. Discard the bay leaf. Place chicken and vegetables on a serving platter. For sauce, bring liquid in the frying pan to a boil. Cook about 3 minutes or till reduced to 1/2 cup. Pour the sauce over the chicken and vegetables. Makes about 6 servings. I like to serve this dish with mashed potatoes, and pour some of the sauce over them.
French Broiled Escargot
One cannot speak about French cooking without mentioning the delicacy Escargot. This is an easy and practical recipe for home use.
1/4 cup olive oil or your personal favorite oil. 12 escargot(no shells) 2 tablespoon chopped garlic dried parsely flakes (to your taste)
DirectionsPreheat broiler. Combine the oil and garlic in a bowl and mash the mixture into a paste. Place the ecargot in a broiling pan and brush them with garlic parsley paste. Broil for about ten minutes or so. When they are nearly finished cooking, sprinkle them with the parsley flakes and broil another 30 seconds. As an appetizer this will serve 2-4 people depending on the other dishes to be included in the meal.

Carpaccio
This famous dish was developed by Giuseppe Cipriani at the famous Harry's Bar in Italy. The name celebrates the memory of a Renaissance painter by the name of Victor Carpaccio. On a plate covered with a layer of greens..such as endive, watercress, or even letuce, thinly sliced raw beef is placed, and drizzled with a mixture of olive oil and lemon juice.You may sprinkle this with freshly grated Parmesan cheese.Note: It is best to use an electric slicer, or a very sharp knife to slice the beef. The beef should be of good quality and tenderness. I prefer a boneless sirloin tip roast for this process. I roast the remaining beef and utilize the Carpaccio as a appetizer. It is a wonderful choice for ethnic foods and recipes.

Pan-Fried Veal Chops With Tomato Marsala Sauce
4 veal chops (the italian style is to pound them flat) 2 eggs 2 cups dried bread crumbs (finely crushed salt (to taste) ground pepper (to taste) 3 tablespoons extra virgin olive oil 3 tablespoons vegetable oil The Pan Sauce 1 tablespoon extra virgin olive oil 1/4 cup chopped onion (finely chopped) salt and ground pepper to taste 1/4 cup meat stock (you cn use poultry stock) 14 cup marsala wine 1 cup of drained tomatoes (crush them) 1 tablespoon butter 4 ounces parmigiano-reggiano cheese shaved into curls. If you can, only use genuine cheese from italy as the flavor is superior. Pan fry the chops and then add the other ingredients and simmer until desired thickness is present. Hazelnut Cream Soup
A light starter with an original flavor. The smoothness of the cream contrasts with the texture of the chopped hazelnut garnish.

Prep Time: 30 min.
Cook Time: 15 min.Ingredients:
4 1/4 cups chicken stock 3.5 oz hazelnuts 3 leeks 1/2 onion 6 tbsp oil Salt and pepper 4 tbsp single cream Chives and chopped hazelnuts for decoration
Preparation:Roast the hazelnuts and chop. Set aside 2 tbsp and crush the others to a powder. Wash the leeks and onion and stew slowly in the oil (5 minutes in the microwave on high). When soft, add the hazelnuts, fry lightly and cover with the stock. Cook for 10 minutes. Blend, then check for salt and add the cream. Serve in cups sprinkled with the chopped hazelnuts and chives. Gazpacho soup:
This is a wonderful treat on a hot summer day.
1 small minced onion 2 cups fresh diced yomatoes 1...or...2 (depending on your taste) teaspoons of honey 2 cups fresh diced tomatoes 1 cup minced green peppers 1 cucumber diced (I prefer seedless) juice of 1/2 of a lemon juice of 1/2 of a lime 2 tablespoons of vinegar 1 teaspoon of dried basil (if you have fresh basil...use more) 1 teaspoon of dried tarragon (if you have fresh tarragon...use more) 2 tablespoons of extra virgin olive oil salt & pepper to taste (try it without!) Tobasco sauce to taste

Poor Man's Pudding
Schoenlappers Taart Line a buttered baking dish with buttered slices of stale bread. Slice apples on top.(slice enough so th whole top is covered with apple slices) Sprinkle with 1/2 or 3/4 C. sugar
1 t. cinnamon. Add 1 C. water bake until brown on top.
Belgium ethnic foods and recipes
Beer Stew
4 pound cubed beef stew meat 2 pound chopped onions 3 cups of beer (you may substitute a non alcohol beer) 1/2 cup flour 6 crushed garlic cloves 3 tablespoons brown sugar 1/4 cup wine vinegar 1/2 cup chopped parsley 2 teaspoon thyme 1/2 cup sunflower oil 3 cups of hot beef broth 1 tablespoon salt Pepper to taste
Roll the beef cubes lightly in flour. Heat oil and brown the meat. Remove the meat and brown the garlic and onion. Put all the ingredients (keeping aside half the wine vinegar) in an ovenproof pan. Cover and bake in a pre-heated oven (325 F.) for 2 hours.
Remove from the oven and add the remaining wine vinegar. Bring to a boil, cover and cook at a low heat for 15 minutes.
